Log in to Mac Mini without a screen

I've set up a Mac Mini Pro via a monitor, mouse and keyboard. After I log in via the monitor I can access remotely via AnyDesk or Screen Sharing, but if I reboot its not logged in to an account so AnyDesk isn't running. Its connected via wifi only so I don't seem to be able to ping it after reboot. What options do I have to log into and boot the GUI without a monitor so I can run it via AnyDesk or OS X screen sharing? Its intended to be a portable machine so it may change locations and thus wifi networks.
