Changing system shortcuts like Undo without side effects

is the same as on an english keyboard: command + z.
The problem: On a german keyboard layout the z key is switched with the y and as such very inconvenient to reach with left hand only. (On english keyboard it would be the same as pressing command + y - not ergonomic)
Using System Preferences
> Keyboard
> Shortcuts
and adding a custom App Shortcut
does not seem to work as command + y collides with other application shortcuts (e.g. Redo in Sublime).
So what are my options to remap the undo shortcut system-wide so that pressing command + y triggers it, without side effects?
Preferably I would not like to use third party solutions.

Since notes.app seems to accrue a "rolling history" of data and doesn't automatically save out versions of your files to disk in any reasonable way (date stamped, etc), I was wondering if anyone knows of a way to access the _history_ of the note data you have accrued.
Specifically this came up because I am trying to restore something that I have lost, because the
undo
command doesn't work in the app.
Any tips would be appreciated.

Change key bindings in Apple Mail
Is there a way to change (actually, remove) key bindings in Apple Mail? I sometimes find myself switching between tasks and impatiently backspacing over some word in an editor - only to find that I've sent a bunch of backspace events to Mail and apparently deleted the N newest messages from my inbox...
Is there a way to change (actually, remove) key bindings in Apple Mail?
I sometimes find myself switching between tasks and impatiently backspacing over some word in an editor - only to find that I've sent a bunch of backspace events to Mail and apparently deleted the N newest messages from my inbox. (And worse, 'Undo' doesn't help me - it always undoes a bunch of things that I did earlier, but not the deletion of things that I'm now frantically trying to remember what they were.)
Ideally, of course, I'd like for these involuntary deletions to be undoable. But failing that, is there a way to change the association of keyboard events to actions in Apple Mail so that this specific error cannot happen? I'd gladly restrain myself to deleting messages only with the mouse.

Where do apps store their "undo history" and how can I export it?
I would like to export the "usage history" (or whatever the undo function uses to revert a document to a previous state) of a currently open app. Where is that information stored, and how can I export it? Sample apps for which I would like to be able to do this include Scrivener, Photoshop and Gimp.

## Update
Strange … if I go to Keyboard Pref Panel > Shortcuts, and 'Add' an All Applications shortcut for Undo, then in that little window I **can** enter Command + Z. But it still does not work anywhere else!

When I edit photos and videos in Apple's Photos.app on desktop or iPhone/iPad it appears that the original video is stored forever, so any edits I make can be undone. I can crop, rotate, retouch, apply adjustments, and trim, then later come back and hit the "revert" button to restore them to their original form.
There are some operations (trim) that give me the option to save a new version that can't be reverted.
Other than saving or exporting a new version and deleting the original, is there any operation I can perform (intentionally or not) that makes irreversible changes or causes existing changes to become irreversible?
I'm interested in answers for both desktop MacOS and iOS (if different).

We both have shake-to-undo enabled globally, but mine does not do this (nor do I want it to). Shake-to-undo typing is working equally for both of us.
In further troublehsooting, I notice that I'm still in iOS 12.3.1, and she's on 13.x (not at her phone rn).
Does anybody recall this behavior being specifically added in iOS 13? By any chance has it been changed since then? I've done a lot of searching on this, and there are countless posts from others who are frustrated by it.
We had to turn off the global setting to get her phone to stop doing this, which is unfortunately b/c it is otherwise an important and useful feature.

What just happened? I have a flash drive of mine with a lot of school files that I just planned on doing a format. So before I went to Disk Utility then erasing it to the format I wanted, First I backed-up all its files by creating a new folder on my desktop then just copy pasted all my files from the flash drive to this new folder I just created. Afterwards, I went on erasing my flash drive therefore losing all it's files but It's okay cause I did a backup anyways.
Now when I was just about to put the the files from the new folder to the newly formatted flash drive, I was about to select all by doing shortcut command "command + a" I accidentally pressed "command + z" instead doing an undo and all the files were lost! After that, finder doesn't even allow me to do a redo!
Please help those are a lot of important files now they're all gone in just 1 second and they're not even in the trash. I did a spotlight search of some files I can remember but I still can't find one!

This is far too slow, and I often reflexively hit Command-Z instead, which has other unintended effects.
Are there other options, ideally without the use of backspace, arrows, or waiting?
